QUICK STEAK LUNCH

So, Robs mom has gotten in the lovely habit of sending us a package from Omaha Steaks about every 3 months.  We get everything from pork chops, twice baked potatoes, chicken breasts, filet mignon, burger pates and sirloin.  Unfortunately the sirloins are the only things that come out a little tough.

After staring at them for a month or so we just wanted them out of our freezer.  I marinated them in olive oil, brown sugar, chives, lime, garlic and rice wine vinegar.  VOILA!!!! Nice and juicy sirloins (enough to last a week haha)  I went to whole foods and grabbed some great looking kale that I blanched and then sauteed, as well as yellow squash.

Delicious and light for a hot humid day.  Needless to say we will be having a variety of steak dishes over the next few days! I'm thinking tacos next.
